This seminar-course will be taught by the Escuela de Hosteleria of Jerez, its objective is to provide the participant with a knowledge of the culture of tapas in Andalucia, learn the time honoured techniques and its implications and applications.

Course Description
The course will begin on the first week of September and will last for 30 hours from Monday to Friday. The seminar will be divided into two modules: theory and practice which will be taught as follows: 2 sessions of 3 hours of theory and 8 sessions of 3 hours of practice.
Course Content:

  • History of Tapas.
  • Basic Culinary Techniques.
  • Elaboration of cold dishes.
  • Elaboration of hot dishes.
  • Fried dishes.
